I made chicken shawarma. Shawarma is in the same catagory of a kebab and gyro. It was amazing! I served it with flatbread, yogurt, and a chopped salad. The chopped salad was cucumber, red onion, bell pepper, feta, olive oil, lemon juice, salt and pepper. This was a great summer meal!

Chicken Shawarma (The Avengers’ favorite meal!)

500g/1lb chicken breast, 1 inch pieces

2 tbsp oil

1/2 cup plain yogurt

1 egg

1 lemon, juiced

1 tsp black pepper, cardamom, cinnamon

1/2 tsp red pepper flakes, garam masala

2 tsp fresh grated ginger

1 garlic clove, minced

Mix everything together. Let marinate for an hour. Stir fry until cooked through and dry.

I made a vegetarian biryani. It. was. not. good. I won’t even torture anyone with this recipe. I think it was mostly a texture thing for me. Biryani is basically curry mixed with rice all together. It was very mushy! David liked it. Oh, well!

For Israel I made shakshouka. It is the Middle East’s version of huevos rancheros. We loved it! It was a cheap and quick dinner! Try it.

Shakshouka (eggs in spicy tomato sauce)

1 onion, chopped

1 bell pepper, chopped

1 spicy pepper, finely chopped (I used a green chile)

2 garlic cloves, minced

28 oz. can chopped tomatoes

1 tsp chili powder

1 tsp cumin

4-6 eggs

Saute onion and peppers in tsp olive oil until soft. Saute garlic until fragrant. Add tomatoes and spices. Simmer for 10 minutes. Carefully crack eggs into sauce. Cover. Cook for 5 minutes for poached eggs.

I served this with french bread. Delicious! This is a great alternative breakfast option.
