Reunited and It Feels So Good…

…I have been reunited with my beautiful KitchenAid mixer. It is truly, the only thing I have missed. My mother-in-law was wonderful enough to bring it to New England for me. I couldn’t wait to get it out of the box and to use it.

I decided to make a cake for our new small group from Crossway. Crossway Christian Church is my home church that we have started to attend while we are in this transition period of life. I made an apple cider cake inspired by our apple cider donuts from Mack Apples in Londonderry, NH.

Everyone loved my autumn inspired creation: Apple Cider Cake with Spiced Brown Buttercream and Spiced Sliced Almonds.

Apple cider cake

1/2 cup butter, softened
1 cup sugar
3 eggs
1 tsp vanilla
2 cups flour
1 tbsp baking powder
1/2 tsp salt
1 tsp cinnamon
1/8 tsp clove
1 cup Apple cider

1. Preheat the oven to 350. Butter and line with parchment paper two cake pans.
2. In a large bowl cream together the butter and sugar until smooth. Add the eggs and vanilla and mix well.
3. In a separate bowl, mix together flour, baking powder, salt, cinnamon, and ground clove.
4. Working in batches and mixing, add a half the dry ingredients into the butter mixture, half the cider, rest of the dry ingredients, and the rest of the cider. Be sure to scrape down the bowl between each addition.
5. Divide into the two cake pans and bake for 20-25 minutes until a toothpick comes out clean.

Spiced Brown Buttercream

1/2 cup butter
2 cups icing sugar
1/2 tsp cinnamon
1/2 tsp salt
1 tsp vanilla
Milk

1. In a small saucepan, slowly melt the butter over low heat. Continue to cook the butter until it turns amber in color and smells nutty. Turn of the heat and cool until it is soft in texture not liquid.
2. Beat the butter, icing sugar, cinnamon, salt, and vanilla until well combined. Add a splash of milk to get the right consistency.

Spiced Sliced Almonds

1 cup sliced almonds
1/4 cup sugar
1/2 tsp cinnamon
1/2 tsp vanilla
2 tbsp water

1. Preheat the oven 350.
2. Mix together all of the ingredients and spread on parchment paper lined sheet pan.
3. Bake for 10 minutes, stir, bake for another 10 minutes. Cool completely.
