I choose to make fudge for Mongolia. I was looking for something different than just meat. If I made meat for every country I would be using up a large portion of my grocery budget. This was the second time in my life that I made fudge. I wasn’t too pleased with my results. I need to practice my sugar skills. My fudge came out grainy. This was of course a cook’s error.
I used the exact recipe from Indobase.com. Other than the fact the texture was not correct they still taste wonderful. How could you go wrong with sugar and butter?

Mujaddara (Lentil and Bulgur Pilaf)
1/2 cup brown or puy lentils, keep an eye out for stones
1/2 cup bulgur (I had bulgur/quinoa mix.)
1 1/2 cup water
1/2 tbsp oil
1. Bring lentils and water to a boil. Cover the pot and simmer for 20 minutes.
2. Sauté onions slowly in oil until golden in color.
3. After 20 minutes of simmering add bulgur and sautéed onions to the lentils.
4. Continue to simmer for 10-15 minutes until the water is evaporated and the bulgur is cooked.
I served the pilaf with a little feta on top. We had some chicken marinated in lemon garlic dressing (homemade) and salad. It worked perfectly. I will make this again.
11 countries to go and 8 recipes!! My goal is to be done by Nov. 8th. This is doable and I can’t wait to say I accomplished my goal.
